Breakfast Casserole

Breakfast casseroles are a great way to cook breakfast while you are busy doing other things. You can feed a crowd and look like a champ with very little effort. Honestly, you can put almost anything you want in here like peppers, onions, or mushrooms and come out a winner. This basic recipe will get you started. Let your imagination run!

Once you’ve browned and drained the sausage, the rest is just mixing and baking. You can cut the ingredients in half for a smaller batch if you like. This casserole also freezes well once it’s baked, can be reheated the next day if refrigerated, and is an excellent gift for a friend in need of a relief meal when dealing with sickness or loss.

Breakfast Casserole

This one has all the greats.

Equipment

  • Large Skillet For browning sausage
  • 9×13 Baking Dish
  • Measuring cups
  • Fork or Whisk
  • A place to drain the cooked sausage

Ingredients
  

  • 1 pound sausage browned and drained
  • 12 eggs cracked and beaten
  • 1 cup milk or heavy whipping cream you do you
  • 2 cups shredded cheese I prefer sharp cheddar but any kind will do
  • Tater Tots One layer in your baking pan
  • Salt and Pepper to taste

Instructions
 

  • Brown sausage and drain, crumble it up
  • Place one layer of tater tots in the baking dish
  • Sprinkle sausage over the tots, add shredded cheese and reserve a little for the top.
  • In a mixing bowl, whip up eggs, milk, salt and pepper, pour over the top of the casserole and stir to incorporate everything together. Arrange the pan to be level and even. Bake at 350 for one hour. Serve warm

  1. I’ve been preparing these for years …but use the lean ham instead …abd sometimes change up the cheese depending on what I have. It is always a winner!❤️

  2. HI Bena – Love your new site! Assuming you can use frozen tater tots in the breakfast casserole recipe?

  3. Not sure what I have done wrong but it has been in the over for around hour and fifteen mins and still not set in the center when I cut into it. Any suggestions. I have put foil over top since it was getting to brown.

    • I’m not sure either. Mine are always done in an hour. Have you checked your oven temp? I’d leave the foil over it and just let it go till set. If it bounces back when you tap it then it’s done.

    • Maybe you used a deeper casserole dish than Bena did? I make a corn casserole, and when I use my smaller but deeper dish, it takes quite a bit longer to get done.
