1can hot Rotel drainedyou can use mild instead of hot
1can mild Rotel drained
2cans kidney beans drained
2cans northern beans drained
2Vegetable bouillon cubes
1PKG vegetable mix
3big pkg Conecuh
1quart chicken brothOne carton
Instructions
Slice Conecuh sausage (or small rope sausage of your choice) into small rounds, brown and drain them, set aside. In a large Crockpot, pour in 2 cans of seasoned turnip greens with broth. Drain and pour in the cans of Rotel and beans. Stir in Knor Veggie Mix, sausage, broth and add bouillon cubes. Cook on high 2-3 hours. (Or you can simmer everything in a large stock pot on the stove for 30 minutes. That's what I did)This dish is a little on the spicy side and goes well with sweet cornbread like Jiffy cornmeal mix or just add 1/2 cup sugar to your cornbread recipe. The sweet cornbread is optional. I used mild Rotel instead of hot because I have a sensitive pallet and it was still on the warm side to me thanks to the seasoned collards and the sausage. Feel free to adjust to your taste on heat if need be. This makes a big crockpot full. I made half a recipe and it fed the three of us with a quart leftover.
