Buttermilk Pie

Ingredients
  

  • 1 Pastry shell easy recipe on my Facebook page
  • 3 eggs separated set egg whites aside for meringue
  • 1 cup sugar
  • 1 Tablespoon butter softened
  • 2 cups buttermilk
  • 1/4 cup all purpose flour
  • 1/4 teaspoon grated lemon peel
  • 2 Tablespoons lemon juice

Instructions
 

  • Preheat oven to 425
  • In a large bowl with mixer at low speed: blend egg yolks, 1 cup sugar, and 1 Tablespoon butter until smooth. Slowly add other ingredients and blend until smooth. Pour into prepared pastry shell and bake 10 minutes. Reduce oven temp to 350 and bake an additional 40-45 minutes or until pie is set. Cool
  • Meringue:
  • Preheat oven to 400
  • With a medium bowl and mixer on high whisk three egg whites and 1/4 teaspoon of salt for two minutes. Add two tablespoons of sugar at a time for a total of six (6) Tablespoons of sugar. Make sure all sugar granules have completely dissolved by rubbing a small amount of meringue between your fingers. Whisk on high until stiff peaks and no sugar granules can be felt. Arrange meringue on top of pie and bake for ten minutes or until golden brown.
