

Choose a pumpkin that is still firm for this step. Quarter the pumpkin and remove all seeds and the soft flesh around them. Place pumpkin slices on a baking dish with sides to avoid spilling rendered liquids into your oven.

Bake your pumpkin cut sides up at 350 for 45-50 min Utes or until for tender. Scoop out baked pumpkin from off the skin with a spoon. If the pumpkin you have contains lots of moisture then be sure to drain it well before using in the recipe below.

Fresh From Scratch Pumpkin Pie
Turn a pumpkin patch pumpkin into a wonderful pie!

Ingredients
- 2 cups cooked pumpkin
- 12 ounces evaporated milk one can
- 2 large eggs
- 1 tsp all spice
- 1/2 tsp cinnamon can use 1 tsp if desired
- 1/2 tsp vanilla
- 1/2 cup brown sugar
- 1/3 cup granulated sugar
- 1 prepared pie shell
Instructions
- To prepare pumpkin: Cut fresh pumpkin into quarters, remove seeds and soft flesh connected to seeds. Bake, cut side up, at 350 for 45-50 minutes or until tender. Scoop tender pumpkin off the pumpkin shell with a metal spoon. Drain if necessary.
- To prepare pie: Combine 2 cups of prepared pumpkin with remaining ingredients in a mixer or by hand. Pour into prepared pie shell and bake in a preheated oven at 425 for 15 minutes, then reduce oven temp to 350 and bake an additional 55 minutes OR until center is set.
