Are your bananas getting too ripe? Instead of banana bread how about some banana oat muffins?

Preheat oven to 375, grab a mixing bowl and let’s get busy!
3 cups rolled oats
1.5 cups fat free milk or soy milk
Two ripe bananas
1/2 cup brown sugar
2 eggs
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 teaspoon vanilla
1 teaspoon baking powder
1/2 cup pecans or walnuts if you want to
Pour oats into your bowl first, then add all other ingredients right on top. Using a fork, begin by stirring eggs, bananas, and milk and then work your way deeper into the bowl until all ingredients are well combined. Want to add some additional fruit like chopped apples or dried cranberries? You do you!
Pour batter into lightly greased muffin pan and bake for 15 minutes or until set. Remove baked muffins from pan and serve warm with butter if desired.

Can you use quick cooking rolled oats?
It will have a different texture but it should still be good
Just wanted to make sure that there is no butter needed.
