Pie crust is so easy! Make them in advance and you’ll never buy them at the store again. The older I get, the more I want to be aware of what is in my food. This is just one more thing I can make all by myself and not worry about preservatives or weird things.
2 and a 1/2 cups all purpose flour
One teaspoon sugar
2 sticks of salted butter sliced up
1/4 tsp salt (optional)
If you prefer to use unsalted butter then you will need to add 1 teaspoon of salt instead of 1/4 tsp salt.
In a food processor: add all of the flour, one teaspoon of sugar, and the appropriate amount if salt. Use the pulse function to incorporate all the butter into the flour. Slowly add a Tablespoon of ice cold water (NO ICE) into the processor at a time until a dough ball forms. Shape the dough and cut into two equal parts. Cover each half and refrigerate one hour before using.
This dough is good in the refrigerator for 2-3 days or can be frozen for up to a month.
To roll out your dough simply sprinkle a small amount of flour out onto a sough board or other surface. place dough ball in the center of the floured surface. Using your hand, apply a light coat of flour to a rolling pin and then roll out your dough to the desired shape and thickness. If the dough is too hard to roll out, simply work it in your hands for a minute or two and it will loosen up.
