Biscuit or scone? You have to decide that for yourself. I always thought biscuits were made with buttermilk and scones were made with heavy cream, and never the two shall meet. Maybe it’s all in the way you cut them? I don’t care what you call these, they are amazing. I dare you to eat one and not smile.

These lovely little pillows of happiness and joy have a habit of making me smile. They seem to have the same effect on my family. The only problem I have found with baking these is how fast they are gone. I really need to start making a double batch! Go ahead and preheat your oven to 425 degrees.

This recipe is easy to pop together in a mixer but it is also super doable in a bowl and two hands. We start out by adding the flour and other dry ingredients into the bowl. Give it a whirl to stir it all together.

To the flour, go ahead and put in the baking powder, baking soda, salt, sugar, and orange zest.

If you need a rule of thumb for the orange zest, one orange will typically yield one tablespoon of zest. Don’t waste that orange! Pop that naked orange in a plastic bag and store it in the fridge or freezer until you need some juice OR eat it while you wait for your yummy biscuits to finish up in the oven.

Cold butter seems to work best for this recipe. One stick of butter or one half cup of butter, it’s all the same thing. Just make sure you cut it into chunks so it will blend better. Just work the butter in until the mixture looks crumbly. It won’t take long. If you are making these by hand, use a fork and keep going until all the big chunks become small little crumbles. Want to really make these special? You can throw in a cup of dried cranberries at this point and thank me later.

Time to add the buttermilk! Pour the buttermilk in slowly as the mixer is going so you don’t splash it all out. You only want to mix until the dough comes together.

With clean hands and a lightly floured dough board, knead the dough a few times – five or six times should do. You just want to make sure it is all together and smooth. Don’t work too hard or you’ll make them tough.

Roll it, and pat it, and mark it with a Bee! Or, just form it into a round shape that is about an inch and a half thick.

Cut eight rectangles with a knife or cut round biscuits. You do you.

Brush tops with milk and sprinkle with sugar.

Bake for 13-15 minutes or until tops are a light golden brown. Serve warm. I bet you end up eating more than one!

Orange Zest Biscuits

Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoons sugar
- 1 tablespoons grated orange rind
- 1 cup dried cranberries optional
- 1/2 cup one stick cold butter, cut into chunks
- 2/3 cup buttermilk
- 1 tablespoon milk
- 1 tablespoon sugar
Instructions
- Preheat oven to 425 degrees
- In a mixer, add all dry ingredients: 2 cups all-purpose flour, 1 baking powder, ½ teaspoon baking soda, ¼ teaspoon salt, 1 tablespoon sugar, mix to combine. Add in ½ cup cold butter. Mix for one minute on a low speed, or until the mixture looks crumbly. If you are adding the dried cranberries, do so now. Slowly pour in buttermilk. Mix just until dough forms. Do not over work the dough.
- **To make this recipe by hand: Using a medium sized bowl, incorporate first 6 ingredients in the bowl using a fork. Stir well to insure it is thoroughly combined. Make a well in the middle of the flour mixture and place the butter in the center of the well. You can use clean hands or a fork to gently incorporate the butter into the flour until all big pieces are worked in and the mixture looks like it is all small crumbles. Stir in the cranberries now if you are adding them. Last, slowly pour in the buttermilk while stirring with a fork. Make sure all the buttermilk is mixed in but stop working when the dough completely comes together.**
- Turn the dough out onto a lightly floured surface and knead just a few times with lightly floured hands. Shape dough into a round shape that is approx. an inch and half thick. Use a knife to cut 8 triangles and place them in a lightly greased baking dish.
- Brush the tops of each scone with milk. Sprinkle with granulated sugar.
- Bake until scones are lightly golden brown which should take between 13-15 minutes. Serve warm.
